The Hotel Head Chef is a key leadership role, responsible for managing all aspects of the hotel’s kitchen operations while ensuring the delivery of exceptional dining experiences. The Head Chef oversees menu planning, food preparation, staff management, and operational efficiency, ensuring that the quality, taste, and presentation of all dishes exceed guest expectations. This role combines culinary creativity, strategic planning, and team leadership to drive operational success. The position is physically demanding and requires standing for extended periods, lifting, and performing manual labor. The Hotel Head Chef reports to the Food and Beverage Manager and works closely with all departments within the hotel to ensure seamless operations.

Job Functions

Delivering Outstanding Culinary Experiences
Designing innovative, seasonal menus that align with guest preferences and the hotel’s brand.
Ensuring food quality, taste, temperature, and presentation consistently meet or exceed guest expectations.
Addressing guest feedback in collaboration with the Food and Beverage team to refine offerings.
Operational Leadership
Overseeing all kitchen operations, including food preparation, inventory management, and cost control.
Managing purchasing, receiving, food transfers, and maintaining compliance with HACCP and food safety standards.
Coordinating with other departments to execute special events, banquets, and room service seamlessly.
Team Management
Recruiting, training, and supervising kitchen staff to maintain productivity and morale.
Scheduling staff to ensure efficient operation during peak and off-peak times while managing labor costs.
Conducting performance reviews and implementing development programs for team members.
Health and Safety
Maintaining the cleanliness and organization of kitchen spaces, fridges, and freezers.
Ensuring compliance with health and safety standards, passing regular inspections with excellence.
Enforcing food safety protocols, including monitoring temperatures and proper storage practices.
Administrative Duties
Analyzing financial performance, monitoring food costs, and reporting on profitability.
Preparing daily operational reports, managing budgets, and tracking inventory.
Developing and implementing strategies to optimize kitchen efficiency and cost management.
Creative Leadership
Introducing new dishes and conducting trials to keep menus fresh and exciting.
Staying updated on industry trends to maintain the hotel’s competitive culinary edge.
Collaborating with marketing and events teams to create signature experiences for guests.
Other Responsibilities
Representing the kitchen in senior leadership meetings and contributing to the hotel’s strategic goals.
Handling additional duties as assigned by the Food and Beverage Manager to ensure overall success.

Experience/Requirements
Culinary Expertise
Culinary Degree with at least 7 years of progressive experience, including 3 years in a leadership role.
Experience in high-volume or luxury hotel environments is strongly preferred.
Leadership and Management
Proven ability to lead, motivate, and develop a diverse team of culinary professionals.
Strong problem-solving and decision-making skills in a fast-paced environment.
Technical Proficiency
Proficiency in Microsoft Office and kitchen management software.
Comprehensive understanding of HACCP, WHMIS, and food safety standards.
Personal Attributes
Positive attitude and team-oriented mindset.
Strong verbal and written communication skills.
Ability to work in a confidential capacity, maintaining professionalism at all times.
Additional Assets
Experience with inventory management and cost control.
Certification in food safety and sanitation practices.
Additional Considerations

Employees must always be of sound mind, exhibit good judgment, and report to work fit for duty.
This position works indoors and outdoors in a variety of environmental conditions.
This position requires travel between the resort, located in Banff, and the Calgary Sales Office. Additional travel may be required.
The Head Chef must maintain a high standard of conduct, professionalism, and confidentiality at all times.
Some uniform pieces are provided.
This role is subject to all terms and conditions of the Sunshine Village Employee Handbook, Policy Manual, and the Alberta Employment Standards Code.
