Full job description
What will be your daily pursuit?:
Ensure the smooth running of the day-to-day operations for Farm and Fire, driving our restaurant to be a world class dining experience.
Compensation:
70,000 - 80,000 CAD + Benefits

What will you do in this job?:
Management
Continue to drive exceptional guest and team experiences.
Ensure smooth running and maintenance of the Farm and Fire restaurant, lounge, fireside lounge and banquet room.
Assisting and investing in hiring talent, training, coaching, development and retention of team members
Lead the day-to-day operations focused on consistently delivering exceptional guest service standards and increasing sales.
Create a culture of empowerment, teamwork, continuous improvement and a passion for providing exceptional service.
Anticipate challenges with a collaborative solution driven strategy that will enhance the performance of the Elk and Avenue hotels food and beverage operations.
Preparation of monthly forecasting and reports and assist in the development, implementation and monitoring the budget to maximize revenues.
Participate in the budgeting process – develop, implement and manage the budget, forecast, inventory and operating cost for the various outlets to maximize revenue and manage expenses.

Ability to manage all F&B and day-to-day operations within budgeted guidelines.
While reporting to the Manager of the Elk and Avenue Hotel, establish strong partnerships with the Hotel leadership team and all Pursuit Collection leaders.
Collect, communicate and lead the efforts to know and understand our guests, guest trends, innovation, and product development.
Be with the team and guests to obtain feedback on food and beverage quality and service levels; follow up and communicate feedback from guests and team to improve overall experience.
Assist with planning, innovation and execution of functions and events.
Creatively assist in development and implementation of F&B promotions for Farm and Fire.

Supervision
Supervises the training and cross training of FOH Staff and development of the Food and Beverage Assistant Managers.
In this position the Executive Chef will report directly to the F&B Manager, as such essential collaboration on menu creation, pricing and presentation is a top priority.
Schedules the staff according to volume and assigns tasks.
Interviews and hires new employees and carries out employee performance appraisals and disciplinary action.
Liaises with other departments, ensuring communication and resolution of problems.
Reports all maintenance and repair needs to maintenance and operations teams.

Administration
Attends and conducts Management and supervisor meetings to ensure coordination of activities, and review of policies and procedures.
Responsible for accurately processing payroll using ADP and distributing tips among eligible staff members.
Meets with other departments and clients to plan and coordinate food and beverage functions.
Ensures compliance with departmental policies, rules and regulations.
Attends and guides Travel Trade and Group Events Management meetings. Working with the management team to organize banquet Event Orders.
Ensures adherence to cost control procedures by reviewing labor and supply costs.
Prepares the monthly labor forecast.
Uses Craftable to manage food, wine, beer, liquor cost and monthly inventory counts.
Review labor projection tracker daily.
Other
Complies with the Pursuits policies and procedures.
Performs other tasks as assigned by management.
What skills and experience do you need for this job?:
Selection criteria

Minimum 5 years of experience in hospitality and travel industries experience as a manager.
Proven high end restaurant leadership experience.
Wine knowledge certification preferred, but not a requirement.
Thrives in a fast paced and high energy work environment.
Working knowledge of various computer software programs (MS Office and Teams, restaurant management software, POS)
Proven creativity and inspiring food and beverages trends and best practices.
Experience with best-in-class operating systems, training, staff development and the operational management of large and complex operations.
Expertise in building relationships and working on teams across all levels of an organization, particularly with operating teams, line supervisors, seasonal staff from a broad range of cultural and ethnic backgrounds.
Able to create “followership” through modelling our core values and best practices.
Experience with financial management and creating strong employee and guest satisfaction.
