Executive Chef

The Opportunity
Banff Centre is seeking a creative and innovative Executive Chef to provide trendsetting vision, strategy and a collaborative leadership style to Banff Centre's professional culinary division. Bringing fine-dining and banquet experience in a multi-restaurant environment, the Executive Chef will design inspired cuisine that melds tradition and innovation using sustainable local, fresh and healthy ingredients, incorporating both classical and modern cooking techniques.

The Executive Chef is responsible for positioning the dining experience as a leading destination in creativity in conferences for Banff Centre and to meet and exceed the service and quality expectations of our guests. Reporting to the Director, Food and Beverage, the Executive Chef is responsible and accountable for directing, purchasing, controlling and coordinating the operations of food production for all Banff Centre venues. The successful candidate is self-driven and seeks to influence the culinary industry through their positive actions during their tenure at Banff Centre.

Specific Accountabilities
Reporting to the Food and Beverage Director, below are some key accountabilities:

Satisfy all food service requirements by producing the required quantity and quality of meals each day
Work with the Director of Food and Beverage to achieve the departments budgeted profit levels
Develop and maintain a flexible process for forecasting inventory requirements, placing orders and optimizing inventory levels
Develop and maintain relationships with suppliers to secure competitive prices/contracts for supplies and maintain delivery schedules
Minimize operating costs by optimizing work schedules, standardizing recipes, improving processes and ensuring all equipment and supplies are in excellent working condition
Enable kitchen and stewarding staff to function as a high performing team at all times, maintaining open communication, establishing clear objectives and priorities, and a culture of positive behavioral intent
Ensure improved performance and healthy staff relations through the acquisition, training, development and motivation of supervisory and support staff
Ensure a positive and safe work environment for all Banff employees, aligned with Banff Centre’s policies including but not limited to code of ethics, anti-harassment policies, contractual obligations, and strategic directions
Foster an internal culture that maintains the highest standards for customer service, excellence of staff, participant and guest experience, and fiscal, operational, and organizational integrity
Ensure all kitchen and stewarding staff represent Banff Centre to any stakeholders and constituents in an informed, helpful, and positive way, striving to increase the organization’s public value in each interaction
Recruit, hire and mentor staff, assigning work and measuring their performance in relation to the strategic standards of excellence and goals
Qualifications and Educational Requirements
Minimum 8-10 years’ cooking experience in high volume hotels, resorts or institutions overseeing multiple venues in a similar or senior position
Completion of Red Seal Chef certification required
Ability to conceptualize and execute creative menus, vegetarian menus and vegan menus based on current culinary trends, market research and customer feedback
Experience creating menus for conferences, fast casual concepts, and fine dining concepts
Proven track record of cost control including food, labor, equipment and food wastage
Completion of Certified Chef de Cuisine program or Certified Master Chef program considered an asset
Advanced wine knowledge or sommelier certification considered an asset
Knowledge of Canadian Indigenous cuisine considered an asset
Experience leading teams within a unionized environment considered an asset
Special Requirements
Due to the nature of the job, this position requires the candidate to be available to work a flexible, irregular schedule and weekends.
Employment Terms & Benefits
In accordance with the terms of employment governing Management/PSP employees, this is a permanent, full-time position, subject to a 6-month probationary period.
The salary range for this position is $80,838 to $120,050 based on experience.
The successful candidate will enjoy twenty paid vacation days and 4 personal days annually, extended medical and dental benefits and participation in an employer-matched pension plan.
