Job Description

At the Rimrock, dining is an art form, a reflection of place, passion, and precision.
As Director of Culinary, you will provide strategic leadership across all food & beverage venues, including PARKER’S Table, Social, the Listening Lounge, In-Room Dining, and Stewarding operations. You’ll shape the culinary vision, drive innovation, and ensure operational excellence, while empowering executive chefs and kitchen leaders to deliver unforgettable dining experiences that express the best of Canadian terroir with global sophistication.

This is a role for a culinary leader who thrives on innovation, operational mastery, and storytelling, someone who understands that food is both craft and connection.

Key Responsibilities

Culinary Leadership & Execution

Provide strategic oversight and leadership across all culinary and stewarding operations.
Define and implement the Rimrock Banff culinary vision, ensuring brand alignment, consistency, and long-term relevance across venues.
Translate emerging culinary trends, wellness, and nutrition innovations into operationally viable concepts.
Oversee menu design and seasonal offerings to celebrate premium Canadian ingredients with global sophistication.
Ensure exceptional standards of quality, presentation, and guest satisfaction.
Team Leadership & Development

Inspire, mentor, and develop executive chefs, kitchen leaders, and stewarding teams.
Foster a positive, inclusive, and high-performing culture rooted in collaboration, innovation, and Rimrock’s values.
Conduct performance evaluations, training, and succession planning to build bench strength.
Operational & Financial Management

Establish and monitor food cost targets, menu margins, and portioning standards.
Drive operational efficiency, productivity, and compliance with health, safety, and sanitation standards, including HACCP initiatives.
Oversee kitchen workflows, system scalability, and cross-venue operational consistency.
Innovation & Guest Experience

Partner with F&B and Brand leadership to create immersive, narrative-driven dining experiences.
Champion sustainability in sourcing, kitchen operations, and menu design.
Continuously evaluate and improve culinary offerings, service execution, and guest impact.

Qualifications

What You Bring

Red Seal Certification or equivalent professional culinary training.
Minimum 10 years of progressive culinary leadership experience in fine dining or luxury hotel environments.
Proven expertise in Canadian and globally inspired cuisine with modern, ingredient-driven techniques.
Experience overseeing multi-venue culinary operations and stewarding teams.
Strong financial acumen, operational excellence, and organizational leadership skills.
Demonstrated ability to inspire, develop, and lead high-performing teams in fast-paced, high-standard settings.
Experience with wellness-focused culinary programs is an asset.
International experience preferred.
Bonus if You Bring

Leadership in 5-Diamond or Michelin-rated kitchen environments.
Advanced HACCP or food safety program experience.
Established relationships with local farmers, producers, and farm-to-table networks.
Expertise in butchery, charcuterie, or preservation techniques.
Experience with Asian culinary methods (e.g., fermentation, wok/robata techniques).
Sustainability project experience, including waste reduction and energy-efficient kitchen systems.
Proven coaching and development of culinary talent for succession planning.

Physical Demands

Continuous standing for long periods of time.
Frequent walking, bending, and reaching above/below shoulder height.
Frequent lifting and carrying up to 22 lbs / 10 kg.
Occasional lifting and carrying up to 50 lbs / 23 kg.
Ability to work in a hot, noisy, and fast-paced environment for extended shifts.
Visa Requirements: Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining Canadian work authorization.
